KOTO is a startup coffee shop based in Seattle, offering innovative jelly coffee and tea, inspired by the popular coffee jelly dessert from Japan. Since 2023, our team of three - Ree and Heywood, based in Seattle, and Kotone, located in Osaka, has spent a year developing our original products and concept, and we were finally ready to share them with you in the summer of 2024. We believe our diverse backgrounds and strong teamwork are what make our coffee shop truly special.

Kotone is a licensed chef with a BA in culinary arts. Her background in product development, coupled with her expertise in restaurant management and the successful launch of 7 new establishments, highlights her versatile skill set. She undoubtedly brings creativity, culinary expertise, and operational know-how to the table. Her dedication to taste, passion for cooking, and professional culinary skills are the essence behind Koto

Ree is a licensed interior designer. Beyond her career, she is a caring mom and a friendly person who loves food, people, and dogs. Born in Japan and spending most of her life in Seattle, she is passionate about cooking and loves sharing her culinary creations with her friends and family. She is a key connector in our team, turning our business dreams into reality

Heywood is a licensed architect who runs his own design company. Prior to Koto, he had already designed several F&B retail stores, managing everything from branding to building permits, and helping small business owners achieve their dreams. Now, he is channeling all his ideas into his own coffee shop, including the branding of Koto, the future design of the Koto store(s), and all related social media content
